What to do with those overly ripen bananas? We, here at Naturopathic Earth, heavily promote unripened bananas for their prebiotic & resistant starch characteristics as well as low sugar content. On occasion, you don’t get to that banana until it is a nice, sweetened, black-dotted ripened banana. At that point, morph it into a delectable banana apple walnut bread!
Banana Apple Walnut BreadPrint This
- For Apples
- 2 Tbsp butter
- 2 Granny Smith Apples, Peeled, Cored, and Cut into 1/2 inch dice pieces
- 1 Tbsp Brown Sugar (optional)
- 2 Ripe Bananas
- 1/2 Cup diced Walnuts
- 3/4 Cup Coconut Flour
- 6 (Pastured) Eggs
- 6 Tbsp Coconut Oil, melted
- 2 Tbsp Organic Honey
- 1/4 Cup Chia Seeds
- 1/4 Cup Pumpkin Seeds
- 1/3 cup Organic Whole Milk
- 1/4 tsp Ground Nutmeg
- 1/4 tsp Ground Cloves
- 1 tsp Cinnamon
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- Dash of sea salt
Preheat the oven to 350 degrees.
Grease a 1 pound loaf pan.
On medium-high heat add butter and cook apples for 4-5 minutes. Add brown sugar while mixing.
Combine the apples with the remainder of the ingredients and blend until thoroughly mixed. (At least 2 minutes.)
Pour batter into the greased pan.
Bake for 45 minutes or a toothpick/knife comes out clean when probing it.
Allow bread to set and cool before removing.
Top with bananas, confectioner sugar, cocoa nibs, agave nectar, an assortment of spreads, or whatever you like!
You may replace the milk with non-dairy milk alternative. You may replace the honey with agave nectar.
What Does The Banana Apple Walnut Bread Deliver?
The apple, walnuts, banana, chia & pumpkin seeds bring fiber and phytonutrients. The eggs, nuts, and seeds bring protein and beneficial fats. The nutmeg, cinnamon, vanilla, apples, and the banana will bring sweetness.
Apply whatever you like to the top of this banana apple walnut bread! A variety of nut butters, Chocolate Hazelnut, Apple Butter spread, for example, or top with fresh berries, a drizzle of honey or some fresh cream.
