Keto Paleo White Chocolate Almond Butter Cups

I think on the morning of the 7th day of creation, God didn’t rest.  He took a morning walk and during that time he made the pinnacle manifestation of his omnipotent power: peanut butter cups.  Honestly, who doesn’t like peanut cups?  I suppose people who don’t like peanut butter, but honestly those people’s opinions don’t count.  How can you respect someone who doesn’t like peanut butter.  Either way, they are divine.  Today, we are modifying the “classic” recipes to make Keto Paleo White Chocolate Almond Butter Cups.

Why do we need Keto Paleo White Chocolate Almond Butter Cups?  Well, first I am more partial to chocolate peanut butter cups…specifically dark chocolate almond butter cups.  So much so we have a recipe here for them.  (In fact I think it was the first recipe I ever published.  Click below on the caption to see it.)

The main reason we need homemade peanut butter cups is because conventional store-bought ones, made from Reece’s and others, are lack of a better word….crap.  If you look at the ingredient list, sugar is the first ingredient.  Moreover, it uses inferior chocolate (typically processed with alkali) and it is full of preservatives.  These preservatives, like potassium sorbate, have been identified by the Environmental Working Group (EWG) as toxic to our livers and possibly carcinogenic.

These Keto Paleo White Chocolate Almond Butter Cups are visually-appealing and taste great.  First we are switching out peanut butter for almond butter.  Why?  Almond butter is more nutrient-dense than peanut butter. Plus it is less likely to contain a hidden transfat called Partially Hydrogenated Vegetable Oil.  Any non-peanut butter is fine (like cashew or macadamia), but I opted for almond since it is the least expensive one.

We know why Reece’s and other put them in there.  It allows them to stay on the gas station and convenience store shelves for several months, if not a few years, without going rancid.  What do you think those ingredients are doing to our body?  Studies show we are actually decomposing slower upon death because how preservative-laden our food is.

What else is in this?  Well, we want these Keto Paleo White Chocolate Almond Butter Cups to be…well keto and paleo.  So we endeavor not to use an artificial and highly processed ingredients to qualify for the modern version of Paleo.  No dairy or flour of course.  For Keto, we are using ingredients that are high in beneficial saturated and unsaturated fats and of course, low in sugar.  For that we use coconut oil and cocoa butter.  Throw in the NPE favorite, chia seeds, which bring in needed fiber, and we are looking at great keto satiety and taste.

You have the option of adding protein powder.  You don’t necessarily need to do this insertion, for most Americans consume too much protein on a given day.  And excess protein is converted into glucose via gluconeogenesis which is turned into fat.  Since you are likely getting sufficient protein from your other meals, there really is no need to add it to a sweet snack. 

The beauty of this Keto Paleo White Chocolate Almond Butter Cups recipe is that it is super easy to make.  Even men could make this (not to cast aspersion on my sex).  You essentially melt the chocolate ingredients, pour them into the molds and let them set.  You put in the almond butter and then re-melt the remaining chocolate ingredients to make the top layer.  It’s easy and fast, no more than 30 minutes to make.

Now I will say that the Dark Chocolate Almond Butter cups are more nutrient-dense than these Keto Paleo White Chocolate Almond Butter Cups.  Mostly because dark chocolate is using more parts of the cacao bean than white chocolate.  That isn’t to say you shouldn’t eat these. Of course you should!  We need to mix it up a bit.  Maybe God made the dark chocolate ones on this evening walk on the 7th day.

Keto Paleo White Chocolate Almond Butter Cups

Ingredients

  • 1/4 cup almond butter
  • 1/4 cup coconut oil
  • 1/4 cup cocoa butter
  • 3 tablespoons protein powder
  • 2 tablespoons tapioca starch
  • 2 tablespoons chia seeds

Instructions

Heat over medium heat the cocoa butter, coconut oil, chia seeds and protein powder in a medium-sized saucepan.

Line the small muffin pan with coconut oil or butter.  Pour in chocolate mix into each cup, no more than 1/2 inch. Allow to cool in fridge for at least 30 minutes.

Take out of fridge. Scoop your almond butter into each cup.

Re-heat the chocolate mixture.  Pour on top of cups. (Make sure you leave enough to fill all the cups.)  Tap the pan a few times to have mixture settle.  Place in fridge for at least 30 minutes.

Sprinkle with some cinnamon if you like.
