My first experience with toffee was from the veritable, hollowed Dairy Queen Blizzards when I was 7 years old.  I went to this esteemed fast food establishment so associated with small towns and rural America. I perused the various toppings from which to choose and I asked my dad for the Heath topping not knowing what it was.  I guess I was adventurous then.  Then mixed up my delectable blizzard.  I took one bite and I knew I loved it.  I picked up the piece of the Heath toffee and looked at it.  “It’s chocolate and caramel…I’m in!”  From then, chocolate toffee has been one of my favorite toppings.  As such let’s talk about Keto Paleo Dark Chocolate Toffee.

If you are not familiar with my Confessions of an Obese Child brand.  I have a book and a podcast with that name.  It details, as suggested by the title, my adventures and struggles as a fat kid.  In the podcast, I cover what inter-familial dynamics that caused me to turn to food as a numbing agent.  Later as I gained the weight and the ridicule and taunting began at school, I discuss how turned even more to food with this eventually blooming into an all-out food addiction.  Later in high school I lost the weight, but many coping mechanisms that developed during my childhood still linger and haunt my personal and work relationships today.  But that is neither here nor there. One of the “benefits” of being a binge eating fat kid was delving into the tasty food.  I was essentially Augustus Gloop from Willy Wonka.  My parents enabled my poor eating and allowed me to eat whatever I wanted.  One of my go-to treats were candy bars and ice cream.  Going back to Dairy Queen, I likely ate blizzards 3-4 times a week as a kid.  And when I went, I would get 2 or 3 blizzards.  I was a human vacuum medicating my pain with food.

Going back to the Keto Paleo Dark Chocolate Toffee, it is easy to understand why anyone would love this treat.  We all love chocolate.  Like I tell my students who are reluctant to the bitter taste of high percentage dark chocolate, it will grow on you.  Eat the milk chocolate for now but start with 60% dark chocolate and work your way up the number scale to Baker’s Chocolate.  (Actually that 100% stuff is nasty.)

Why do we need Keto Paleo Dark Chocolate Toffee?  Well the conventional toffee is pure cane and corn sugar crap.  If you look at the ingredients of conventional Skor or Heath toffee, it is practically all corn syrup, high fructose corn syrup, various corn sweetener code words like “dextrose” and “maltodextrin” and then loads of preservatives to keep it “fresh.”  All garbage.

Now did our Paleo cavemen ancestors eat sweets like Keto Paleo Dark Chocolate Toffee?  Of course not, but recipes like this are called “Paleo” because they are an #eatclean version of a treat that did not exist back in the Paleolithic days.  It is adapted for modern palates who want to eat sweets but want it to be with ingredients that are found naturally in nature.

So this Keto Paleo Dark Chocolate Toffee recipes contains dark chocolate.  (Want to know the difference between cacao and cocoa, click HERE.)  Dark chocolate is loaded with healthy saturated fats, fiber, protein, and polyphenols which help reduce inflammation.  Plus it is very filling due to the high amount of fat. 

We also use coconut syrup, sugar, and other coconut products.  Coconut as well is full of healthy saturated fats and is infinitely more nutrient-dense than cane or corn sugars.  We use almond butter.  Almond butter is the more nutrient-dense than peanut butter.  Plus it is fat, fat, goodness. We toss in more fat and fiber with chia seeds. Ingredients

  • 1/2 cup coconut nectar
  • 1/3 cup dark chocolate chips
  • 1/3 cup almond butter
  • 1/4 cup water
  • 1/4 cup coconut sugar
  • 1 tablespoon chia seeds
  • 1 ounce unsweetened chocolate
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon coconut oil

Instructions

Line baking sheet with foil or parchment paper.  Use a 9 X 12.

First make the toffee.  Put coconut sugar, coconut nectar, and water in a medium-sized pan.  Warm on medium heat stirring often until comes to a boil and sugar has dissolved.

If you have one, insert a candy thermometer and boil until around 290 degrees . Remove from heat and quickly stir in chia seeds, almond butter, and vanilla.

Pour the contents with haste into the pan, spreading evenly to about 1/2 inch height.

Use a greased knife to score the candy while still warm into bite-size squares or squares of your liking.  Cool for 3 hours.

Now time to prep the chocolate. Melt the unsweetened chocolate and chocolate chips.  While still warm, use a fork, knife, or toothpicks to dip the toffee pieces into the warm chocolate.  Leave the dark chocolate toffee to sit for an hour.

Store in a air-tight container. Enjoy!
