You would be hard-pressed to find someone in America who is averse to brownies. They are as American as apple pie or compulsive TV watching. While we are committed to brownies, we all like to complement it differently. Some like it a la mode while others like it with homemade whipped cream. Either way, let’s oust the crappy ingredients and make a Gluten-Free Paleo Choco Brownies recipe.
Why do we need a Gluten-Free Paleo Choco Brownies recipe? For two primary reasons you do. If one opts for the store-bought pre-mixed packages, that unfortunate soul is looking at loads of added corn-based sweeteners, food dyes, preservatives, and GMO products. These boxed brownies (where you must need to add eggs and horrible industrial-grade vegetable oil) use conventional wheat flour as well. That’s a no-no.
If you choose to make homemade brownies, you certainly get to control your own ingredients, which in itself should make it healthier since you will be purging the aforementioned toxins. However, you are still using wheat flour.
What’s the problem with wheat flour? Wheat has a protein named gluten. There is a condition called Celiac Disease in which the immune system attacks the small intestines anytime gluten is ingested. This is a debilitating disease.
However, most of us are sensitive to gluten. This sensitivity is manifested by abdominal pain, bloating, diarrhea, “leaky gut” syndrome, “brain fog.” and more. Perhaps up to 60% of Americans may have gluten sensitivity so if you have these symptoms (and even if you don’t) you may want to limit or eschew wheat altogether.
Gluten-Free Paleo Choco Brownies

The other recipes we used are nutrient-dense. We use pastured eggs which are super nutrient-dense. One pastured egg equals 6 conventional eggs. Plus we throw in very keto-friendly coconut oil and chia seeds.
Of course no brownie recipe can be complete with dark chocolate. You can either use semi-sweet or dark chocolate chips. You may also use cacao nibs if you want the ultimate expression of cacao superfood goodness. Don’t use crappy milk chocolate chips which are loaded with sugar. Go with the nibs or melted down baker’s chocolate at 100%.

Preheat the oven to 350 degrees. Line an 8X8 baking pan with foil/parchment paper or spray with nonstick oil/butter. In a small sauce pan, melt the chocolate chips over low heat until smooth. Remove from heat and set aside to cool. In a small bowl, whisk together the sugar and pastured eggs. Set aside. In a medium bowl, mix together the almond flour, cocoa powder, chia seeds, salt, coconut sugar and baking soda. Whisk the egg/sugar mixture into the saucepan of melted chocolate. Stir in the vanilla and mix in well. Stir in the dry ingredients and chocolate chips. Mix well. Pour batter into the pan. Bake for 25 minutes or until edges are set, yet the center is gooey and underdone. Sprinkle with sea salt. Allow brownies to cool. Enjoy! You can use avocado, butter, ghee for coconut oil.
