The “Sookie” Factor

I was watching old Gilmore Girl episodes a few months ago when I had a hankering (a Texas word for “craving”) for some warm, straight-out-of-the-oven muffins.  Perhaps it was watching the cook, Sookie (played by then unknown actress, Melissa McCarthy), pull out some steaming muffins.  Nothing makes you want comfort foods more than that great mother-daughter show.

As you likely know commercially-sold muffins use loads of vegetable oil, sugar, and butter.  Most online recipes are no better.  Here I wanted to give the good ole’ Naturopathic Earth try at this veritable breakfast classic.  Why Walnut Dark Chocolate Chip Greek Yogurt Muffins?  Well, because the three hallmark ingredients of Greek yogurt, walnuts, and high-percentage dark chocolate are nutrient-dense, super-fatty superfoods.  When you throw in the minor ingredients into our Walnut Dark Chocolate Chip Greek Yogurt Muffins they make it even more nutrient-dense.  Best of all, no wheat flour, so no gluten or other anti-nutrients!

Walnut Dark Chocolate Chip Greek Yogurt Muffins

Ingredients

  • 3 pastured eggs
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup chopped walnuts
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 2/3 cup honey
  • 1/2 cup full fat, unflavored Greek Yogurt
  • 1 Tbs apple cider vinegar
  • 2 Tbs chia seeds
  • 1 1/2 tsp vanilla extract
  • 2/3 cup of 90% dark chocolate chips (Or highest percentage you can find. Baking bar equivalent is fine.)
  • 1/4 cup of cocoa nibs (Optional) (Nibs are smaller and disperse the chocolaty taste evenly throughout muffin.)

Instructions

Preheat oven to 350 F.

Line muffin tin with liners.

Mix together all the dry ingredients (except chia seeds, walnuts, and chocolate).

In a different bowl, mix all wet ingredients.  (Mix until combined. Don't over stir wet ingredients.)

Combine wet and dry ingredients. (With almond flour be careful not to over mix.)

Add in the chocolate chips, chia seeds, walnuts and nibs.  Fold in evenly.

Bake for about 10 minutes, until an inserted toothpick comes out clean and the top is slightly browned.


Trial & Error is the name of the game for these Walnut Dark Chocolate Chip Greek Yogurt Muffins.  Muffins can be tricky.  The base of this recipe though can be used for forays into the blueberry, apple cinnamon, and banana walnut worlds (among other).
