Savory, Scooped-Out Sweet Potatoes Recipe

Sweet potatoes.  Those two words harken me back to autumn days, and in particular Thanksgiving day.  Sweet potato pie with a dollop of whipped cream.  Yum!

A common thought is that sweet potatoes are more nutritious than regular ones.  Yes and no.  Sweet potatoes are higher in fiber, Vitamin A, and don’t spike our blood sugar as fast as well as have 100 calories less than traditional potatoes and 1/3 less the carbs.  (The latter are higher in magnesium, iron, and potassium.)

Either way, both potatoes are rather high on the glycemic index and therefore would not be featured on any low-carb or ketogenic diet.  So you should limit your consumption if that is your goal.

But most of us love to indulge in sweet potatoes, regardless of lifestyle plan. Either in pie form, as French fries, or just simply eaten as is.  This sweet potatoes recipe is an ideal one since it is not fried yet is augmented with other nutrient-dense ingredients.  Why have a boring sweet potato with butter on the side of your meat if you can spruce it up like this sweet potatoes recipe?

Stuffed Sweet, Crunchy Sweet Potatoes

Ingredients

  • 2 medium-size sweet potatoes
  • 1/3 diced onion (any type)
  • 2 teaspoons extra-virgin olive oil
  • 2 tablespoons chopped walnuts (or pecans)
  • 2 tablespoons chopped parsley leaves
  • 1 tablespoon hemp (or chia) seeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon Himalayan sea salt

Instructions

Preheat the oven to 375 degrees.

Poke the sweet potatoes several times throughout the whole potato.

Rub one of the 2 teaspoons of EVOO on top of the potatoes.

Place on baking sheet and cook for 55-60 minutes or until tender.

Cut the sweet potatoes in half. Scoop out the middle section to create a concavity.

Sautee the onions for 3-4 minutes in EVOO on low heat.

Inside a small bowl, combine the onions, nuts, parsley, seeds, cinnamon, and salt.

Pour the mixture into the concavity and liberally throughout the entire length of potato.

 

Notes

Reheat leftover potatoes at 350 degrees at 20 minutes.

This recipe is Paleo in nature in that there is nothing processed in it, nor does it contain dairy.  Give it a shot.  If you want something a little sweeter replace the onions and parsley with raisins or cacao nibs.
