In my Occult Health Episode on 12 Paleo Desserts, I listed quite a few heavy desserts.  Baklava, various pastries using coconut or almond flour, and alike.  Those are great when you are in the mood for something substantial.  But if you are looking for something light, yet still nutritionally-dense, try this Non-Dairy Keto Whipped Cream with Raspberries recipe.

Various non-dairy recipes exist for whipped cream.  You can find some made from coconut milk; other from even tofu.  I like this Non-Dairy Keto Whipped Cream with Raspberries recipe because it contain cashews.  Cashews, though not nuts per se, are still-quite nutritious.  One cup boasts 150 calories, 12 grams of fat (mostly the beneficial monounsaturated), 5 grams of protein, and ample amounts of magnesium and iron.

Soaking your nuts is crucial in this recipe since it makes it easier to process them.  But in general, we should soak most of our nuts, legumes, and seeds due to high phytic acid levels.  Phytic acid is, in essence, toxins which the aforementioned release to thwart animals from eating them.  Consuming too much nuts, legumes, and seeds can cause digestive problems in us, humans, as well. Consider buying a dehydrator to eliminate these anti-nutrients.

I also recommend you use raw cashews as most cashews (and nuts in general) are roasted in vegetable or peanut oil.  The industrial-grade oils are loaded with trans fats which are quite harmful to our body.

Raspberries. High fiber, high phytonutrients. Perfect scoopers for cream.

Of course you can use this non-dairy keto whipped cream recipe with any fruit you prefer.  I suggest raspberries since they trap and better retain the cream as opposed to blueberries.  Both are great with this recipe, but I prefer raspberries.  Buy them organic since raspberries (and all berries) score very high on the EWG’s annual Dirty Dozen list of most-pesticide laden produce.

This Non-Dairy Keto Whipped Cream with Raspberries is ideal for any diet, especially high-fat keto.  The nut-based cream brings loads of fat (the chia seeds bring even more) and natural sweeteners (thanks, cinnamon and honey!), but the berries bring much-needed fiber and antioxidants.

Ingredients

  • 1 cup cashews, soaked 1 hour and drained
  • 1 tablespoon organic honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon of cinnamon
  • 1 tablespoon chia seeds
  • 1/8 teaspoon sea salt
  • 1/4 to 1/3 cup water, as needed

Instructions

Combine cashews, honey, vanilla, and salt in a food processor.

While the blade is running gradually add water.

Puree in spurts, stopping to scrape with spatula or long spoon.

Add enough water to make smooth consistency.

Chill before serving.

Sprinkle cinnamon and chia seeds when serving.
