We all love french fries.  We all love ranch dressing.  Some people like their fries dipped in ranch dressing!  But we all know that french fries are pretty lousy for our health.  On one level, the potatoes, even sweet potatoes, are simple carbohydrates with little nutrition.  They spike our blood sugar which initiates the inflammatory insulin response.  To worsen the matter, frying potatoes in vegetable oil turns them into a trans fats nightmare.  {For a reminder of the effects of trans fats on the body, listen to this NPE Radio podcast, or read this article.}    Potatoes are the most consumed vegetable in the United States mostly due to our love of fries.  But on occasion we need to choose a healthier alternative that is still crunchy and tangy.  Introducing NPE’s The Crispy, Zesty Kale Chips with Paleo Ranch Recipe You Are Dying To Eat.

Kale is a cruciferous vegetable along with spinach and broccoli.  As most of you know, it is one of the most nutrient-dense foods in the world.  Not only is it low in calorie but high in fiber (both of which are important in weight loss and maintenance), they are loaded with your Daily Recommended Allowance of Vitamins A & C plus anti-oxidants, polyphenols, and other great things!  Studies show that kale helps lower blood pressure, “bad” cholesterol, and heart disease.  In the Pantheon of superfoods, it is in the upper echelon of the upper echelon.

You might have seen kale chips sold at “Whole Paychecks” for $5.00 for a bag that is the size of those $1.00 Lays or Cheetos bags.  They are super-expensive.  Why not make your own?  It doesn’t take long at all and you can spice it as you like.

The Crispy, Crunch Kale Chip Recipe With Paleo Ranch Dipping Sauce You Are Dying To Eat

Ingredients

  • Kale Chips
  • Half a bunch of kale leaves
  • 1/2 tablespoon melted coconut oil
  • 1 1/2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon of sea salt
  • 1/8 teaspoon of cayenne
  • Ranch Dressing
  • 1/2 cup of Paleo mayo (****see below)
  • 1/2 cup of coconut milk
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • Paleo Mayo Recipe
  • 1 Egg (room temperature)
  • 2 tablespoon lemon juice or apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon mustard (preferably dry mustard)
  • 1 cup of oil (either almond, walnut, or light olive oil)

Instructions

Preheat oven to 300F. Line a baking sheet with foil or parchment paper.

Remove kale leaves from the stems and tear into large pieces.  Wash leaves until very dry.

Place leaves into bowl.  Pour the coconut oil over the leaves and mix well.

Mix in the spices and seasoning to kale bowl.

Spread out the kale leaves evenly onto the baking sheet.

Bake for 10 minutes.  Turn the kale leaves over and bake another 15 minutes until kale looks like it firmed up.

Remove and cool for 4 minutes.  Eat quickly because kale chips don't taste nearly as good old.

For Ranch dressing, whisk all the ingredients together.  Season as needed with pepper and salt.  Maybe be used for up to a week if sealed properly in container.

 

I think it is the ranch dressing that makes The Crispy, Zesty Kale Chips with Paleo Ranch Recipe You Are Dying To Eat so great!  Kale chips may be bland (if not done well), or people dip them in sugary, high fructose corn syrup ketchup.  Try it with mustard or this Paleo ranch recipe.  It is Paleo in that most creamy dressings contain buttermilk, soybean oil, MSGs, and additives that make it so addictive.  The ingredients in it are simple and non-inflammatory.
